Job Description

Assists and replace the Director of Food and Beverage in the management, administration and operations of all Food and Beverage Service functions to provide high quality service, maximizes profits and market share


  • Assists in developing, planning, and ensuring the implementation of service standards in the F&B Service Division
  • Continuously suggests new concepts and improves existing processes that will benefit employees’ role, revenues, costs and guest satisfaction
  • Maintains complete knowledge of the features, services, rates and promotions at the hotel
  • Conducts effective communication meetings with all F&B section heads
  • Resolves conflicts or issues in the department
  • Responds promptly to guest concerns
  • Meets VIP guests
  • Recognizes employees’ feedback on operations and any factors affecting their roles
  • Prepares periodic budgets, forecasts and capital expenditures for the department
  • Analyses outlets revenue trends, cost trends, menu engineering and reservation projections and take corrective measures whenever necessary
  • Actively participates in the Human Resources related matters of the department, recruitment, appearance, appraisal, training and development, succession plans and disciplinary procedures
  • Possess full knowledge of emergency procedures
  • Participates, suggests and encourages activities that are environmentally friendly
  • Maintains the highest standard of professionalism, ethics and attitude towards clients and colleagues
  • Develops strong, productive, professional relationships with internal and external guests
  • Maintains per level of equipment and supplies
  • Assists the F&B Manager in establishing an annual entertainment, promotional and festive seasons plans
  • Carries daily outlet inspections and set up periodic control measures
  • Drives the implementation of HACCP standards in the division and take corrective actions for non conformities.
  • Hands on the trainings of standards and systems
  • Produces monthly concise reports and comments on trends highlighting corrective measure taken and to be monitored
  • Participates actively in daily restaurant briefings ensuring all communication within the F&B department is passed onto all Colleagues
  • Actively manages the menu engineering process and POS based statistics incorporating these in monthly report for corrective actions where required
  • Drives up-selling opportunities and guest satisfaction
  • Establish proper feedback and reporting lines with Hierarchy within and outside own department
  • Ensures work ethics and discipline is maintained at all levels


Skills/Knowledge Required:  

  • Knowledge of Food and Beverage products, menus and standards of service
  • Financial, analytical and basic mathematical skills
  • Excellent English language skills, Arabic is desirable
  • Ability to acknowledge and respond to guest feedback adequately

Proficiency in the use of computer for:

Qualification Standards:


Degree in Hotel Management, majoring in Food and Beverage Management



Progressive experience of six years in an F&B Management position with a five star hotel with same outlet numbers, preferably two years at a similar position.

Minimum of one opening experience of a five star hotel in UAE


Licenses or Certificates:

HACCP advanced certificate

WSET Intermediate Level


Grooming: All colleagues must maintain a neat, and well groomed appearance (specific standards will be provided)
