Job Description

To provide strategic leadership and direction to ensure the Food and Beverage operation (service & production) achieves its goals and successfully contributes to the hotel identity, guest experience and overall profitability of the hotel whilst maintaining Jumeirah Brand standards.


Develop the Food & Beverage strategy in order to provide innovative and exciting guest experiences that meet the business objectives.

Ensure all tasks in the food and beverage division's POP (Pre Opening Plan) are completed to ensure a successful opening according to Jumeirah Brand Standards.

Participate in the preparation of the annual business plan, and Sales and Marketing Plans to ensure Food and Beverage is appropriately represented.

Co-ordinate the organizational and administrative functions in all areas of the Food and Beverage Department to ensure delivery of the strategy and compliance with Jumeirah standards

Compile and manage a rolling 12 month calendar of special promotions and activities that generate additional revenue and popular interest.

Using appropriate tools such as JD Power, Mystery Guest and ad-hoc guest feedback monitor service and food and beverage standards in all outlets and kitchens ensuring that managers take corrective actions as necessary.

Monitor the activities and trends of competitor hotels, restaurants and bars and keep up to date with international trends in order to ensure product offering remains up to date and the competitive advantage of the hotel is maintained.

Make ongoing recommendations for the modernization of equipment, service methods, and presentation to improve guest satisfaction and profits.

Ensure that each outlet is accounted for separately as an individual profit centre and is managed by a team who are accountable for their profitability.

Monitor closely the profitability of all food and beverage outlets in order to provide solutions to improve problem areas. Assist the F&B Management team in implementing corrective measures.

In conjunction with each Outlet Manager set the annual operating budget which will form part of the overall hotel business plan.

Conduct monthly financial reviews with each outlet Manager.

Hold a monthly F&B colleagues communication meeting.

Hold a weekly F&B HOD meeting.

Participate in public relations activities, sales calls or other promotional activities designed to enhance the image and profitability of the Food and Beverage department and the hotel.

Personally and frequently verify that guests in the hotel are receiving the best possible service available in order to make continuous improvement.

Spend time on the floor in the various operations to ensure the operation is managed according to standard.

Frequently verify that the best possible and available products are used in the hotel operation to ensure guest satisfaction.

Ensure that 100% of colleagues receive an annual appraisal and 6 month performance appraisal.

Ensure a training and development plan is developed and followed for all colleagues for both formal and "on-the-job" training.

Ensure that monthly food stock takes, beverage stock takes and 6 monthly OSE counts take place.

Ensure that HACCP and other local regulations are strictly adhered to. Ensure the highest food hygiene handling standards are followed by all food handlers.

All pre opening tasks and responsibilities as per pre opening plan but not limited to pre opening plan - if applicable.


Any other duties as may reasonably be requested by the management team including assistance for large events or hotel functions.

The ideal candidate should hold a Management qualification from a recognised hotel or business school or MBA or other post-graduate university education. Experience working in a culturally diverse workforce with over 2 years as EAM F&B/DF&B in a 5* luxury property.Management experience in free standing restaurants and in large volume operations 10+ restaurants to include restaurant refurbishment or development.

Work experience in the USA, ME or GCC and Asia and a proficient in spoken and written business English and Competent in Microsoft Office applications.
